nixos/firefly-iii: change statedirectory

Browse Source 
Set `StateDirectory=firefly-iii` instead of trying to derive it from
`dataDir` + add `dataDir` to `ReadWritePaths`, allowing `dataDir` to be
set to full paths outside of `/var/lib`.
